Ratatouille Recipe French Style
Ratatouille is French, meaning to toss. It is a popular dish in Provence in the summer because it allows the cook to use much of the harvest. It is filling and the healthy ingredients make this a perfect hearty meal.
Ratatouille Recipe French Style Ingredients
1 cup of virgin olive oil
1 pound of coarsely chopped onions
2 pound of eggplants or aubergine cut into 1” cubes
3 zucchini, peeled and cut into small strips
1 sweet red pepper, cut into strips
1 green pepper, cut into strips
2 cloves of crushed garlic
6 tomatoes (stewed)
1 can of tomato paste
1 teaspoon of salt
1 tablespoon of basil
1 tablespoon of rosemary
1 tablespoon of oregano
1 bay leaf
a dash each of parsley, dill and pepper
Cooking Ratatouille Recipe French Style
Preheat oven to 400 F. Fill a casserole dish with a ½ cup of the olive oil and toss in the eggplant, cover and bake for approximately 30 minutes.
Add the rest of the olive oil to a large skillet and saute the onions, zucchini, peppers and garlic for about 20 minutes until the ingredients are cooked and softened. Add all the other ingredients except the eggplant and simmer covered for 10 minutes. Stir occasionally. Add the eggplant mixture and simmer for another 10 minutes.
This is wonderful served hot. The flavors of the herbs added to that of other ingredients make this a perfect meatless meal. Scoop it over rice and serve with garlic bread and a small salad. Ratatouille can also be used to fill crepes and omelettes. It’s a versatile dish.
